"I am of full Yemenite descent, and my roots run deep in the city of Rosh HaAyin. Our family has a large, beautiful synagogue there, founded by my grandfather and great-grandfather when they immigrated from Yemen. Today, my father proudly manages it. Every year, on the morning of Simchat Torah, a beautiful tradition takes place: the worshipers bring their families, and we all share breakfast together as one community. Each year, without fail, my father asks me to prepare Sabaya for the synagogue. I’ve been making Sabayah since I was a little girl, side-by-side with my father. Over the years, I got married and opened my own business where we sold traditional Yemenite food. The Sabaya became a huge hit—people would travel from all over the country just to get a taste! For those who don't know, Sabaya is a traditional Yemenite pastry made of 30 paper-thin layers of dough. Between each layer, we spread Samneh (traditional clarified butter, which we make ourselves) and honey. It is absolutely delicious!"
